Bacon Cheddar Meatloaf

Ingredients:

Loaf :

  • 2 pieces bacon, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 large egg yolks
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon hot sauce
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons heavy cream
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 pound ground beef chuck
  • 8 ounces ground pork
  • 8 ounces ground veal
  • 8 ounces sharp cheddar, shredded (2 1/3 cups)
  • 1/3 cup chopped flat-leaf parsley

Glaze:

  • 2 tablespoons tomato paste
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons water

Directions:

Preheat oven to 400 degrees F.

Cook bacon in a medium nonstick skillet over medium-low heat, until crispy and fat renders, about 10 minutes. Remove bacon with a slotted spoon to a paper-towel lined plate, reserving renderings in the skillet. Cook the onions and garlic in the pan drippings until brown, about 15 minutes. Let cool.

Meanwhile, in a large bowl whisk the eggs, mustard, hot sauce, Worcestershire, cream, salt, and pepper. Add the meat, cheese, parsley, and cooked onion. Chop and add the bacon. Mix with a fork until evenly blended. Whisk the glaze ingredients together in a bowl.

Dampen hands with water and on a foil-lined cookie sheet, pat mixture into a loaf shape. Bake until an instant-read thermometer inserted into the center of the loaf registers 155 degrees F, about 1 hour. Spread the glaze onto the meatloaf after about 50 minutes.

Salsa Meatloaf Recipe

Ingredients:

  • 1 pound ground beef sirloin
  • 1/2 cup salsa
  • 1/2 cup Italian seasoned bread crumbs
  • 1/2 cup shredded Cheddar cheese
  • 1 egg, lightly beaten
  • 3 cloves garlic, minced
  • dried parsley to taste
  • salt and pepper to taste
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5x9 inch loaf pan.
  3. Bake 45 minutes in the preheated oven, or to a minimum internal temperature of 160 degrees F (72 degrees C).

Glazed Meatloaf

Ingredients:

  • 1/2 cup ketchup
  • 1/3 cup brown sugar
  • 1/4 cup lemon juice, divided
  • 1 teaspoon mustard powder
  • 2 pounds ground beef
  • 3 slices bread, broken up into small pieces
  • 1/4 cup chopped onion
  • 1 egg, beaten
  • 1 teaspoon beef bouillon granules
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a small bowl, combine the ketchup, brown sugar, 1 tablespoon lemon juice and mustard powder.
  3. In a separate large bowl, combine the ground beef, bread, onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl. Mix this well and place in a 5x9 inch loaf pan.
  4. Bake at 350 degrees F (175 degrees C) for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 more minutes.

Brown Sugar Meatloaf

Ingredients:

  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 1/2 pounds lean ground beef
  • 3/4 cup milk
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 small onion, chopped
  • 1/4 teaspoon ground ginger
  • 3/4 cup finely crushed saltine cracker crumbs
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
  2. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
  3. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
  4. Bake in preheated oven for 1 hour or until juices are clear.

Bacon Meatloaf

Ingredients:

2 pounds ground beef
1/2 pack bacon (1/2 lb)
1/2 onion
1 plain rice cake
1 egg
1/3 cup ketchup
oregano
salt and pepper to taste
1/4 pack of unsalted crackers
3 cloves garlic

Directions:

Put bacon in food processor, chop fine, then add 1/2 of hamburger and other ingredients to food processor, blend together.

Remove blended meat and mix by hand, the other 1/2 of meat in bowl. Grease loaf pan and add meatloaf. Sprinkle lightly with oregano and cook for 2 hours at 275°F; drain pan.

Directions:

Get ready for a cheesy meatloaf with a spicy hot kick. To begin this wonderful recipe, preheat your oven to 350 degrees Fahrenheit or 175 degrees Celsius. Once you have done that, take out a large mixing bowl, and add in the extra lean ground beef tenderloin, two large beaten eggs, grated Tillamook cheddar cheese, the grated mozzarella cheese, 1/4 cup of casa fiesta diced jalapenos, the McCormick Hot Mexican Style Chili Powder, McCormick Ground Cumin, fine table salt, ground course black pepper, and the rice based bread crumbs. Roll up your sleeves, wash and rinse your hands thoroughly, and then mix up the ingredients manually. Really get all of those ingredients evenly spread out through the mix, and be sure to soak up all of the seasonings with the meat.

Once you are done, begin to form a meat log, you want an oval shaped loaf that is firm but not stiff or dry. Now that your meatloaf is ready, take out a baking pan, and grease it with PAM Organic Olive Oil Non-Stick Spray. Once your meatloaf is nicely situated in the baking pan, slide it in the oven to bake for one full hour. Potato Meatloaf

Ingredients:

  • 1 pound extra-lean ground beef
  • 1/2 pound ground pork or ground chuck
  • 1 cup diced onion
  • 1 large baking potato, shredded
  • 1 medium carrot, shredded
  • 1/2 cup vegetable broth, or chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large egg
  • 1 1/2 cups soft bread crumbs
  • 1/3 cup ketchup
  • 1/2 teaspoon herb seasoning mixture
  • .
  • Topping:
  • 1/4 cup ketchup

Directions:

Heat oven to 350°. Combine all ingredients until blended. Pack into a lightly greased meatloaf pan or loaf pan, or shape into a loaf and place in an 11x7-inch baking dish. Bake for 1 hour. Pour off excess grease, spread 1/4 cup ketchup over the top of the loaf, and bake for 20 to 30 minutes longer.

Ingredients:

1 pound loaf French bread
2 pounds lean ground beef
1 onion, chopped
1/2 cup chopped celery
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup (8 ounces) tomato sauce
2 large eggs
4 ounces cheddar cheese, sliced
  1. Preheat oven to 350°F (175°C).
  2. Cut the top off french bread. Scoop out the center to leave a hollow shell. Crumble the scooped out bread and set aside.
  3. In a skillet over medium-high heat, brown ground beef with chopped onion and chopped celery; drain. Add salt, pepper, and tomato sauce; mix well.
  4. Stir in the reserved bread crumbs and eggs; mix well. Spoon into the bread shell and place on a baking sheet.
  5. Replace the top and arrange sliced cheddar cheese on top.
  6. Bake for 30 minutes.

1 pound ground beef
1 pound ground veal
8 ounces ground pork
1 cup dry bread crumbs
1 1/2 cups milk
2 large eggs
1 onion, grated
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 strips of bacon
  1. Preheat oven to 350°F (175°C).
  2. In large bowl, mix ground beef, ground veal, and ground pork.
  3. In a medium bowl, soak dry bread crumbs in milk, add eggs, grated onion, and flour. Mix into the meat mixture. Add salt and pepper.
  4. Form into a loaf pan and top with strips of bacon.

Ingredients:

• 1 12 ounce pkg. vegetarian burger crumbles
• 1 cup barbecue sauce (halved)
• 1/2 cup chopped onion
• 1/2 cup chopped green pepper
• 2 cloves garlic, minced
• 1/3 cup bread crumbs with Romano cheese
• 1 large egg, beaten
• 1/4 teaspoon dried parsley
• 1/4 teaspoon thyme
• 1/2 teaspoon basil
• salt and fresh ground pepper to taste

Directions:

Preheat oven to 325 degrees. Combine 1/2 cup barbeque sauce and all other ingredients in a bowl. Mix well. Transfer to a lightly greased 5 x 9 inch loaf pan.

Bake for 45 minutes. Pour remaining 1/2 cup barbecue over vegetarian meatloaf, and bake an additional 15 minutes.

Sicilian Meatloaf

Ingredients:


2 beaten eggs
1/2 cup tomato juice
3/4 cup soft bread crumbs
2 tablespoons chopped parsley
1/2 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 clove garlic minced
2 pounds ground beef
4 to 6 ounces sliced ham
6 ounces sliced mozzerella

Directions:

Mix together all but the ham and cheese. On a sheet of wax paper pat into a thin rectangle. Lay the ham and cheese in layers ( save out a couple of pieces of cheese) onto the meatloaf, then roll it up, peeling off the wax paper. Place in a 9x13 pan and cook at 350 degrees for about 1 hour and 15 minutes. Put reserved cheese on top and cook until cheese is completely melted. Let stad for about 10 minutes before cutting.

  • 1 to 1 1/4 pounds extra-lean ground beef
  • 1/2 pound ground pork
  • 1 large egg
  • 2/3 cup ketchup, divided
  • 1 teaspoon chili powder
  • 1 scant teaspoon salt
  • dash pepper
  • 2 tablespoons finely chopped cilantro
  • 1 clove garlic, smashed and finely minced
  • 1/2 cup finely chopped red onion
  • 1/4 cup finely chopped bell pepper
  • 1 to 2 tablespoons minced jalapeno pepper

Ingredients:

Combine the beef, pork, egg, 1/3 cup of ketchup, chili powder, salt, pepper, cilantro, garlic, onion, bell pepper, and jalapeno pepper. Mix to blend thoroughly. Pack into a 9x5x3-inch loaf pan. Ingredients:

  • 2 eggs
  • 16 buttery crackers, crushed
  • 1 small onion, chopped
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon rubbed sage
  • 1 cup shredded Swiss cheese, divided
  • 1 pound lean ground beef
Directions:

  1. Preheat an oven to 375 degrees F (190 degrees C). Grease a 3x7 inch loaf pan.
  2. Beat the eggs in a bowl to mix. Whisk in the cracker crumbs, onion, garlic, salt, pepper, and sage. Set aside 3 tablespoons of the Swiss cheese to use as a topping, and stir the rest into the egg mixture along with the ground beef. Pack the mixture into the prepared loaf pan.
  3. Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). About 2 minutes before the meatloaf is ready, sprinkle with the reserved Swiss cheese, and return to the oven until melted.

Ingredients:

1 can (8 oz size) tomato sauce, divided
2 pounds ground beef
1 medium onion, chopped
1 cup bread crumbs
1/3 cup A-1 Steak Sauce
2 eggs, beaten
1/2 teaspoon black pepper

Directions:

Reserve 1/2 the tomato sauce.

Mix remaining tomato sauce, beef, onion, bread crumbs, steak sauce, eggs and pepper; mix well. Press mixture into 9x5-inch loaf pan.

Bake at 350 degrees F for 50 minutes; pour off fat. Top with reserved tomato sauce; bake 10 minutes more.


Oriental Meatloaf Recipe

Ingredients:

2 pounds ground beef
1 cup soft bread crumbs (3 slices)
1 medium carrot, shredded
1 small onion, chopped
1/3 cup chopped celery
2 teaspoons minced fresh ginger root
1 egg, beaten
1/3 cup plus 1 tablespoon Kikkoman Stir-Fry Sauce, divided

Directions:

Thoroughly combine beef, bread, carrot, onion, celery, ginger, egg and 1/3
cup stir-fry sauce. Press mixture firmly into 9-inch round microwave-safe
cake pan. Microwave on Medium-high (70%) 20 minutes, rotating pan once.

Brush top of meat mixture with remaining 1 Tbsp. stir-fry sauce; microwave
on Medium-high (70%) 8 minutes longer. Let meatloaf stand 5 minutes before

Ingredients:

  • 16 ounces ground beef
  • 8 ounces ground pork
  • 2 eggs
  • 4 ounces fresh bread crumbs
  • 2 ounces chopped garlic
  • 1/4 cup olive oil
  • 3 ounces chopped parsley
  • 1/2 cup tomato relish, recipe follows

Directions:

Meatloaf:

In a large mixing bowl combine beef, pork, eggs, bread crumbs, garlic and tomato relish. Finish with olive oil, and then pack into a 9-inch loaf pan and place in the middle of a preheated 350 degree oven. Bake for 35 to 40 minutes or until the center of the meat loaf reaches 170 degrees.

Finish the meat loaf with remaining tomato relish and broil at 500 degrees until tomato relish begins to crust. Allow meatloaf to cool before slicing.

For the tomato relish:

  • 4 large tomatoes
  • 3 red peppers
  • 2 onions
  • 4 ounces ketchup

Chop tomatoes, peppers, and onions into a medium dice. Saute over high heat. Finish with ketchup. Lower heat. Reduce to a simmer.

  • 1 pound ground beef
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon ground black pepper

Cracker Barrel Meatloaf Ingredients:


10 lbs. ground beef
30 oz. chopped onion
1 lb. diced green peppers
10 eggs
5 Tbsp. salt
1 1/2 Tbsp. pepper
1 1/2 qt. diced canned tomatoes
2 1/4 cups grated biscuit crumbs

Place all in large bowl, mix completely with gloved hand. Place in 3 loaf pans. press down with spoon.

Bake at 300° F. in convection oven for 60 minutes. (Increase time in regular oven by about 30 minutes.)

Remove from oven and invert each loaf over 8" wire rack to drain grease and juice.

Spread 1/2 cup of catsup over each loaf.

Cut into portions 5 to 6 oz each and keep warm.

  • 2 teaspoons butter
  • 3/4 pound ground beef
  • 1/4 pound ground pork

Memphis-Style Meatloaf Recipe

Ingredients

For the meatloaf:

  • 2 cups fresh bread crumbs
  • 1/3 cup grated Parmesan
  • 1/4 fresh chopped parsley leaves (about 1-ounce)
  • 1 large white onion, minced
  • 2 eggs beaten
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 3/4 cup ketchup plus 1 tablespoon to brush on top
  • 3/4 pound ground beef
  • 3/4 pound ground veal
  • 3/4 pound ground pork

For the sauce:

  • 1/2 cup (1 stick) butter (cut 1/2 of this amount into cubes), divided
  • 1 medium onion, thinly sliced
  • 1 cup button mushrooms (about 3 ounces), cleaned, trimmed and sliced
  • 1/2 cup demi-glace
  • 4 tablespoons tomato paste
  • 1 cup red wine
  • Salt and freshly ground black pepper

Directions

Preheat oven to 400 degrees F.

For the meatloaf:

In a large bowl, mix bread crumbs, Parmesan, parsley, and onion. Add eggs, salt, pepper, 3/4 cup ketchup, beef, veal and pork, and combine thoroughly until evenly mixed, using your hands if necessary. Form into a loaf in a baking pan and brush top with 1 tablespoon ketchup. Bake in the oven for 50 minutes to 1 hour and let rest 10 minutes before slicing.

About 10 to 20 minutes before the meatloaf is done, begin the sauce. Melt half of the butter in a saute pan (reserving the other 1/4 cup) over medium-high heat, and saute onion until it caramelizes. Add the mushrooms and cook until they become tender and give up their juices. Strain and set aside. In another saucepan, whisk together demi-glace, tomato paste, and red wine and simmer over low heat, allowing to reduce and thicken. Just before serving sauce, whisk in the remaining 1/4 cup of cubed butter, and add mushrooms. Taste and add salt and pepper, as needed.

Slice meatloaf and transfer to a serving dish. Spoon sauce over and serve additional sauce on the side.

  • 1 pound ground chuck

  • 2 large eggs, lightly beaten

  • 1 tablespoon Worcestershire sauce

Directions:

Preheat oven to 350 degrees F.

In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 red pepper, seeded, small diced
  • 1 onion, diced
  • 2 teaspoons (about 3 cloves) chopped garlic
  • 1 pound ground beef
  • 2 eggs
  • 3/4 cup bread crumbs
  • 1 cup grated Parmesan
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar

Directions

Preheat oven to 350 degrees F.

Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.

When the peppers and onions are cool, combine all of the remaining ingredients together except for the marinara. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.

Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

  • 3/4 teaspoon salt, or to taste
  • 2 tablespoons prepared yellow mustard
  • 1/2 cup brown sugar
Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
  3. Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.


Cajun Meatloaf Recipe

Ingredients:

2 tablespoons butter
1/2 large onion, chopped
1/2 cup chopped green bell pepper
1 teaspoon salt
3/4 teaspoon cayenne pepper
1/2 teaspoon dried thyme, crumbled
1/2 teaspoon freshly ground pepper
1/4 teaspoon ground cumin
1 pound lean ground beef
1 egg, beaten to blend
1/2 cup fine dry bread crumbs
1/2 cup ketchup, divided use
1 teaspoon Worcestershire sauce

Directions:

Preheat oven to 375 degrees. Melt butter in heavy skillet over medium-low heat. Add onion, bell pepper, salt, cayenne pepper, thyme, pepper and cumin. Cook until vegetables are tender, stirring frequently, about 10 minutes.

Combine ground beef, egg, bread crumbs, 1/4 cup ketchup and Worcestershire sauce in medium bowl. Blend in sautéed vegetables. Form mixture into loaf 13/4 inches high and 5 inches wide in baking dish. Bake 20 minutes. Spread top with 1/4 cup ketchup and bake for 40 more minutes.

Crockpot Meatloaf Recipe

Ingredients:

2 ½ Pounds Lean Ground Beef
¼ Cup Ketchup + 2 Tablespoons
2 Tablespoons Brown Packed Brown Sugar
1 Large Egg
1 Cup Fresh Breadcrumbs
2 Tablespoons Worcestershire Sauce
1 Onion, Chopped
¼ Cup Cold Water


Cooking Directions:

Combine all the ingredients in a large mixing bowl. Form the meat into a loaf and wrap the bottom and all 4 sites with foil. Place the meatloaf in a Crockpot. Top the meatloaf with 2 Tablespoons Ketchup. Cook on low heat for 7-8 Hours.

Turkey Meatloaf Recipe

Ingredients:

2 lbs. ground turkey
3 eggs, slightly beaten
1 medium red onion, chopped
2 stalks celery, chopped
1 medium bell pepper, chopped
1 cup old fashioned oats
1 can mild Rotel tomatoes, diced
1 lg. jar marinara sauce
1 tablespoon sea salt
1/2 teaspoon pepper

Directions:

Mix together all ingredients except for 1/2 jar of marinara sauce. Place in a large cast iron skillet or 2 loaf pans and cook at 350°F for 45 minutes then spread remaining marinara sauce on top and cook an additional 15 to 20 minutes.

Barbecue Meatloaf Recipe

Ingredients

  • 1 1/2 pounds ground beef, extra lean (raw)
  • 1/2 cup dry breadcrumbs
  • 1/2 cup chopped onion
  • 1/3 cup barbecue sauce, divided
  • 1 tablespoon prepared mustard
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 large egg whites
  • Cooking spray

Directions:

Preheat oven to 350°.

Combine the beef, breadcrumbs, and onion, 1 tablespoon barbecue sauce, and remaining ingredients except cooking spray in a large bowl.

Shape meat mixture into a 9 x 5-inch loaf on a broiler pan coated with cooking spray. Spread remaining barbecue sauce over top of meat loaf. Bake at 350° for 1 hour or until a thermometer registers 160°. Let stand 10 minutes. Cut loaf into 12 slices.
